Cream of Anything Soup Mix

This is one of my most requested recipies. 


With the price of food going up, up and up, who wouldn't want to replace expensive canned foods with easy homemade ones?  That doesn't even take into account the list of ingredients that most of us can't pronounce let alone figure out what they really are.  I of course can't take credit for creating this recipe, but who ever did was ingenious!  You can find this receipy and many other fantastic ones at http://www.hillbillyhousewife.com/.  Funny name, but great site!  I totally suggest you take a look when you have the time.

Here is a step by step instruction of how to create this wonderful on hand mix: (I triple my batch because this is my favorite go to recipe for quick meals and it's sooo versitile!)
2 cups powdered milk

3/4 cup cornstarch (1 1/2 cups flour for those corn sensitive)
1/4 cup instant chicken bouillon
2 Tbsp dried onion flakes (I use more)
1 tsp basil leaves
1 tsp tyme leaves
pepper
& salt
Combine ingredients, stirring til evenly distributed
To substitute for 1 can of condesed cream of whatever soup, combine 1/3 cup of dry mix with 1 1/4 cups of water.  If using the flour substitute add 1/2 to a bit more dry mix to get it to thicken for you.  
NEVER stop stiring milk based recipes, or you will risk scortching the bottom of your pan.  It will thicken as you go.  If you do happen to cake a bit on the bottom of your pan, it will not change the taste unless you really do burn it.
To make mine mushroomed flavored I add in dried shitake mushrooms
Chop with a big butcher knife, or you can also use fresh mushrooms if you prefer

Roughly hand chopped
Add them to your soup and thin with milk until you get the desired consitency for your recipe

This dry mix makes the equivalent of 9 cans of soup, at a cost of pennies per recipe.  To make specific flavors add your desired REAL flavor!  We can pronounce what's in our soup. :)


Cream of Anything Soup Mix

Cook Time: 10 Minutes
Ingredients (1 can)
  • 2 Cups powdered milk
  • ¾ cup cornstarch
  • ¼ cup instant chicken bouillon
  • 2 Tbsp dried onion flakes
  • 1 tsp basil leaves
  • 1tsp tyme leaves
  • Pepper
  • Salt
Instructions
Combine ingredients, stirring till evenly distributed.
To substitute for 1 can of condensed cream of whatever soup, combine 1/3 cup of dry mix with 1 ¼ cups of cold water. Stir constantly over medium heat. (This is when to add the “flavor” for whichever soup you need). Heat and stir until it thickens. Use as you would the canned product.
Flavor list These amounts are per “can”
Mushroom: add ½ cup finely chopped mushrooms.
Celery: add ½ cup minced sautéed celery.
Potato: add 1 cup cooked diced potatoes.
Chicken: add ½ cup cooked chicken.
Vegetable: add ¾ cup cooked vegetables
Broccoli: add 1 cup cooked chopped broccoli.
